Mama Buci Honey is a new import for us. The honey is cooperatively harvested in Zambia and the Winter harvest offers richer, darker honey with notes of molasses that go great on its own, or with cheese that showcases its strong taste.

Mama Buci ("Mother Honey" in the Bemba dialect) is the largest independent honey producer in Africa - they produce two ethically sourced varieties of raw honey, Winter and Summer, each with its own unique flavor profile as determined by the active flora at the time of harvest. Established in 2008, Mama Buci works in many towns and villages of Zambia, using a co-op system to compensate fairly those who watch the hives in exchange for a share of the honey.

Sweet and Savory Honey

I have tasted many different kinds of honey, and this one is quite different. It has a dark color and many savory overtones to the sweet flavor. When you sample this honey, you can almost taste the high-dessert brush of Zambia. It goes wonderfully with Cambozola cheese or other strong-flavored cheeses.
