Arbequina olives are harvested later in the season, allowing the olives to mature on the trees to produce a sweeter oil, which better complements the fig leaf undertones. The olives and the young fig leaves are then crushed together and cold-extracted, creating an intricate, full-bodied oil with fewer bitter notes. Grass undertones are quickly followed by a peppery sharpness before settling with green fig and almond notes.
